Does anybody have a plum tree bursting with fruit right now? I desperately miss the tree we had at our last house, but luckily we have friends who blessed us with a huge stash from their orchard.
This cobbler can also be made with peaches or berries, I just happen to love it with plums! Yes, I realize it is the heat of summer and it’s not an ideal time for baking. I like to bake after the sun goes down when it’s started cooling off and nobody else needs to be in the kitchen.
This cobbler tastes great both warm and cold. Some vanilla ice cream on top would really wow your crowd. Be sure to store the leftovers in the refrigerator — if you have any that is!
This could easily be made into a patriotic dessert with alternating rows of red and blue berries. Tag me in your photos if you make this!
Plum Cobbler
Equipment
- 8×8 dish
Ingredients
Fruit filling
- 3½ cups sliced plums
- ¾ cup sugar (I tried less and it was TART!)
- 2 tbsp cornstarch
- ½ tsp cinnamon
Topping
- 1 cup flour*
- ¼ cup sugar
- 1½ tsp baking powder
- ½ tsp salt
- 1 egg
- ¼ cup butter
- ¼ cup milk**
Instructions
- Preheat oven to 350°
- Mix fruit filling ingredients and pour into 8×8 pan (no greasing is necessary)
- In a large bowl, combine the dry topping ingredients
- Cut in the butter until mixture is crumbly
- Mix in the milk and egg
- Drop spoonfuls of the batter over the fruit topping
- Bake for 30 minutes***
