Plum Cobbler

Equipment

  • 8x8 dish

Ingredients

Fruit filling

  • cups sliced plums
  • ¾ cup sugar (I tried less and it was TART!)
  • 2 tbsp cornstarch
  • ½ tsp cinnamon

Topping

  • 1 cup flour*
  • ¼ cup sugar
  • tsp baking powder
  • ½ tsp salt
  • 1 egg
  • ¼ cup butter
  • ¼ cup milk**

Instructions

  • Preheat oven to 350°
  • Mix fruit filling ingredients and pour into 8x8 pan (no greasing is necessary)
  • In a large bowl, combine the dry topping ingredients
  • Cut in the butter until mixture is crumbly
  • Mix in the milk and egg
  • Drop spoonfuls of the batter over the fruit topping
  • Bake for 30 minutes***

Notes

*I have used both all-purpose flour and gluten free flour. Both turned out great!
** Dairy-free milk works here too!
***After baking for 30 minutes, I like to turn on the broiler to brown the topping. This usually takes 2-3 minutes. Keep an eye on it!
