Chicken Alfredo with Spinach and Sun-dried Tomatoes

This is one of those meals that got thrown together because of the ingredients I had on hand but it makes regular appearances at our table now. It’s got whole wheat pasta, lean protein, and some veggies. Easily justified as a meal on busy nights. If you already have the diced chicken made, this will be even easier! Another bonus is that the ingredients don’t need to be exact. Small adjustments, +/­-, will still taste great.

Chicken Alfredo with Spinach
and Sun-dried Tomatoes

Ingredients:

  • 4 cups cooked, diced chicken
  • 4 cups dry, whole wheat penne pasta
  • 1 15 oz jar of Alfredo sauce
  • 8.5 oz jar sun-dried tomatoes
  • 1 6 oz bag of spinach

Directions:

  • Boil noodles
  • While noodles boil, heat tomatoes in large pan (I don’t add all of the oil!) on medium heat
  • Stir in spinach and cook with tomatoes until it is barely wilting
  • Add in chicken to warm up, then add in Alfredo sauce
  • Turn down heat to medium-low until pasta is done
  • Drain pasta, add to mixture, and mix thoroughly
  • Let warm on stove until ready to serve
